We absolutely love these pancakes for breakfast. If you have more than one dog we recommend serving them separately because this is one breakfast dish that we will fight each other over.
These pancakes are also great for you hoomans. They’re healthier than your average pancake mix and you can sweeten them up by topping them with maple syrup and butter. If you’re making these for your pup then you can top them with cinnamon and Greek yogurt.
Ingredients:
- 2 eggs
- 1 2/3 cups of whole wheat flour
- 1 cup of fat free milk
- 1 tablespoon of butter
- 1 tablespoon of honey
- 1 teaspoon of baking powder
- 1 teaspoon of cinnamon
- 1 cup of blueberries
- 1/4 cup of plain low-fat Greek yogurt
- Cooking spray
In a large bowl, whisk together the flour, baking powder, and cinnamon. In a separate bowl, whisk together the milk, eggs, butter, and honey. Stir the wet ingredients into the flour mixture.
Next, heat a griddle or cast-iron skillet over medium-high heat. Reduce the heat to medium and spray the griddle with cooking oil. Use a 1/3 cup measure to ladle the batter onto the griddle. Place about 1/2 tablespoon of blueberries in each pancake and cook until tiny bubbles pop up through the pancakes and the edges become light brown, about 1 to 2 minutes. Flip and cook the other side. Continue making the pancakes and spraying the griddle with more cooking spray between batches.
Stack 2 or 3 pancakes on a a plate, dot with Greek yogurt, and sprinkle blueberries on top.
