We absolutely love pancakes and peanut butter so this is the best breakfast we could ask for. Mom likes to make us these because peanut butter is a good source of protein for us and because we love it so much. Bananas are good for us too because they’re high in potassium, vitamin B6, and vitamin C; however, bananas are high in sugar so don’t give your pup too many. Mom just tops our pancakes with banana instead of making it a core part of the batter.
FOR THE PANCAKES
- 1 medium egg
- 1/2 cup of low-fat milk
- 1/2 cup of all purpose flour
- 2 tablespoon low sodium peanut butter
- 2 tablespoons of polenta
- 1/2 teaspoon of baking powder
- 3 tablespoons of water
- Cooking spray (as needed)
FOR THE PEANUT BUTTER DRIZZLE
- 2 tablespoons peanut butter
FOR SERVING
- 1 banana
In a large bowl, whisk together the flour and baking powder. In a separate bowl, whisk together the milk, eggs, polenta, water, and peanut butter. Stir the wet ingredients into the flour mixture.
Next, heat a griddle or cast-iron skillet over medium-high heat. Reduce the heat to medium and spray the griddle with cooking oil. Use a 1/3 cup measure to ladle the batter onto the griddle. Cook until tiny bubbles pop up through the pancakes and the edges become light brown, about 1 to 2 minutes. Flip and cook the other side. Continue making the pancakes and spraying the griddle with more cooking spray between batches.
Stack 2 or 3 pancakes on a a plate.
To make the peanut butter drizzle but 2 tablespoons of peanut butter in a microwave safe container and microwave for 15-20 seconds. Next, scoop some peanut butter out with a spoon and drizzle on top of the pancakes. Slice a banana and sprinkle on top of the pancakes.
