The hoomans named these tasty treats after Casper since he resembles a bunny rabbit. These treats are a perfect way to be festive with your dog around Easter or to just show them how much you love them.
Carrots are great for dogs so our hoomans love making this super healthy “dessert” for us. Carrots are good for our teeth, low in calories, and high in fiber, but even though they are healthy they still taste like dessert to us!
Ingredients:
FOR THE COOKIE
- 1 cup of rolled oats
- 2/3 cup of whole wheat flour
- 2 eggs
- 2 tablespoons of coconut oil
- 2 teaspoons of canola oil
- 2 teaspoons of honey
- 1/3 cup of low-fat milk
- 2 large carrots or 1/2 cup of shredded carrots
FOR THE FROSTING
- 3/4 cup of Greek yogurt
- 1/3 cup of fresh parsley or dried parsley
- 1/2 cup of shredded carrots or 2 large carrots
To begin preheat oven to 350 degrees Fahrenheit.
Cut up the carrots and put them in a food processor until they are nicely shredded.
In a mixing bowl, combine eggs, coconut oil, honey, milk, oats, and wheat flour. Mix the ingredients well and then add carrots while continuing to stir.
Put on a baking sheet with parchment paper or a silicone mat and shape them like carrots.
Place in oven and bake until slightly browned on the edges, about 40-45 minutes.
While your cookies are baking make the frosting. Put two carrots in the food processor and blend them up. Transfer the blended carrots to a bowl and add the Greek yogurt. Stir well.
Take cookies out of the oven and let them cool for 5 minutes.
Dip each cookie in the frosting and spread it around evenly. Dip the ends of the cookies in parsley.
